2-1 pound packages of Hat Creek Grown Ground Beef


¾ cup finely chopped carrot

¾ cup finely chopped onion

¾ cup finely chopped celery

4 cloves finely minced garlic

1 ½ cup Italian Seasoned Bread Crumbs

2 fresh ranch raised eggs

2 TB Worchestershire Sauce

1 ½ cup Spicy Garlic Marinade and BBQ Sauce


Ground Pepper

Olive Oil

This recipe will make about 45 bite size meatballs

You will use your oven, a sheet pan lined with parchment paper, a sauté pan, and a crock pot for this quick recipe.

Preheat oven 425 degrees. Rub the inside of a crockpot and preheat it on high. Place one cup of Marinade and BBQ sauce in it to heat, cover with lid. Heat a small sauté pan over medium heat, drizzle a couple tablespoons of olive oil. Once heated, sauté carrots, onion and celery until translucent. Salt and pepper. Add garlic and sauté just a few moments more. Remove from heat and scrape all into a large mixing bowl to cool. Add the bread crumbs and mix. Remove thawed Hat Creek Grown ground beef from the refrigerator. As soon as the sauted mixture feels cool to touch, add the ground beef, eggs, worchestershire sauce and ½ cup Marinade and BBQ sauce. Salt and pepper. Mix all together well. Form into bite size meat balls and place onto lined sheet pan. Bake in oven for 15 minutes. Remove from sheet pan and place in crock pot to finish cooking. You might need to add some water to the marinade. When beef bites are completely heated through, you’re ready to enjoy. These make a great recipe to take to events.
